Recipe: Marvelous mushrooms

Particularly high in B group vitamins – thiamin niacin riboflavin and folate – mushrooms are packed full of goodness.

One of the few good plant sources of vitamin B12, they provide a valuable source of this vitamin especially for vegetarians.

Mushrooms also are a great source of fibre-100g containing the same fibre as 2 sl of wholemeal bread.

Antioxidants and beta glucans are also present ,helpful in prevention of cancer and heart disease respectively.

Mushrooms are one of the lowest calorie vegetable and appear on the ‘free’ list -free to be consumed in large quantities without adding calories,carbs or fats and sugars-great for both those watching their weight and Diabetics.

this fantastic recipe was given to me by a friend years ago and it has remained a favourite

2 cups sliced mushrooms-any type ,I often use the white button variety

1 clove finely diced garlic

2 finely sliced spring onions

1 2cmx2cm wedge of crumbled fetta

Saute the onion and garlic in a little oil

add mushrooms and cook 10 mins until browned and soft

take off heat and add crumbled fetta

Serve as a dip with toasted turkish bread or crackers or as a sauce for barbecue steak
