For those of you that don’t know, Chron’s Disease and Colitis are types of inflammatory bowel diseases (IBD) that causes inflammation of your digestive tract. Implementing an anti-inflammatory diet can help manage the signs and symptoms of IBD. An anti-inflammatory diet is high in vegetables, fruits, antioxidants and fibre while reducing refined carbohydrate and saturated fat. These cookies not only provide you with a good amount of fibre, antioxidants and other nutrients but they also can replace your usual after-dinner treat which is often high in saturated fat, refined carbohydrates and low in fibre and other nutrients.
These cookies are super tasty and can be easily included in your anti-inflammatory diet made by your dietitian as part of your IBD management!
Serves: Approx. 12
Prep: Approx. 30 minutes
- 2 cups rolled oats
- 1 cup almond meal
- 1 tsp turmeric powder
- 1 pinch salt
- 1 egg, whisked
- 2 bananas, mashed
- 2 tbsp honey
- 3 tbsp margarine, melted
- 1 tsp vanilla extract
- ½ cup cranberries
- Preheat oven to 180°C. Line a medium baking tray with baking paper.
- Place oats, almond meal, turmeric powder and salt in a medium mixing bowl and stir to combine.
- In a separate bowl add egg, banana, honey, margarine and vanilla are stir to combine. Add wet ingredients to oat mixture and fold through with a wooden spoon. Add cranberries and fold through.
- Scoop dough into medium balls and spread out on lined tray. Press down with a fork and bake for ~15-20 minutes or until golden.
- Once cookie are baked let cool on a wire rack and enjoy!
