For our second recipe in support of National Diabetes Week, we are targeting someone who is suffering from Type 2 Diabetes who is only taking oral medication and no insulin. This Chocolate, Almond & Chia Seed Pudding recipe modified from Slender Kitchen is low in carbohydrates and high in soluble fibre to reduce the load on the pancreas.

1/2 tsp vanilla extract
2 tbsp chia seeds
1 packet Natvia
1 tbsp unsweetened cocoa powder
1 tbsp almonds, chopped
- Add everything, except the almonds, to a mason jar, bowl, or another container.
- Stir together.
- Refrigerate for at least 4 hours, ideally overnight.
- Top with almonds and serve.
